What do you get when you cross muesli with granola?
The two are so similar, it’s hard to imagine a hybrid.
But if you love both, it’s nice to mix things up with a third version.
This softer granola is only slightly sweet, but it still forms clusters. (That means you don’t have to eat it with a spoon.)
Spiced Chewy Granola
- 1/2 C dates
- 1 ripe banana
- 1/2 C water
- ½ tsp cinnamon
- ½ tsp salt
- 4 C rolled oats
- 1 C cooked quinoa
- 2/3 C milled flax
- 2 C nuts and seeds
Mix the first five ingredients in a blender.
Taste it, and add a dash of anything else you like—maybe cardamom, cloves, or ginger.
Then pour it over the oats, quinoa, and flax.
Stir until the sweet sludge coats everything.
Spread onto a greased cookie sheet and bake at 250°F (121°C) for one hour, stirring every 15 minutes.
For the last 15 minutes, add your favorite nuts and seeds.
If you want, you can also add dried fruit when it’s done.
Store in a sealed container.
And before it’s gone, try to decide whether we can really call it granola.
