It’s a hearty meal, a birthday surprise, and a prank, all in one. It doesn’t get much better when you’re celebrating with a gullible, picky friend!
Last week, I was brainstorming what we could make for a ketchup and potato fanatic’s special day. Inspiration came when I remembered a favorite idea from my past. It’s something my younger self had always wanted to try: Meatloaf Cupcakes!
Here’s the recipe we used.
Weird? You bet! But they were also surprisingly good (they were all I got for dinner that night), not to mention they make deceptively convincing cupcakes!

Yes, that is meatloaf. Frosted with mashed potatoes.
At this point, you may be completely revolted at this culinary oddity. One of my friends was plainly disturbed when I gleefully told her my idea.
Or you may be as delighted with the weirdness as I am – and have the perfect person in mind to receive them!
You won’t see these on my table at Thanksgiving. And I don’t really want them for my birthday. But I highly recommend them for a fun activity with kids or getting a reaction out of good-humored friends!
